Simple Oven-Baked Crispy Chicken Wings

These oven-baked buffalo wings skip the deep fryer but deliver all the classic taste you love. Our pastured chicken wings naturally have richer flavor and better skin texture, delivering a chicken wing that will impress at your next football party or family table.

Ingredients
For the wings:
2 lbs pastured chicken wings
1–1½ Tbsp baking powder (this is the key to ultra-crispy skin)
1/2 tsp kosher salt (adjust to taste)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp black pepper
For the classic buffalo sauce:
½ cup Frank’s RedHot Original Cayenne Pepper Sauce
4 Tbsp (½ stick) unsalted butter, melted
1 Tbsp pure maple syrup or honey (optional – adds a touch of balance without refined sugar)
To serve:
Fresh celery sticks
Carrot sticks
Ranch or blue cheese dressing
Instructions
Dry the wings thoroughly. Pat your chicken wings completely dry with paper towels. This step is crucial for maximum crispiness.
Combine seasonings in a large bowl. Toss the dry wings with the baking powder, salt, garlic powder, onion powder, smoked paprika, and black pepper until evenly coated (adjust seasonings to your liking).
Line a large rimmed baking sheet with foil and place a wire cooling rack on top. Arrange the seasoned wings in a single layer, skin-side up, with space between each piece so air can circulate.

OPTIONAL BUT HIGHLY RECOMMENDED: place prepared baking sheets with chicken uncovered in the fridge to rest and soak in the flavors for 1-6 hours prior to baking.
When ready to bake, preheat oven to 425°F.
Bake for 45–60 minutes, flipping the wings halfway through (around 25 minutes). They’re done when the skin is golden-brown and ultra-crispy, and the internal temperature reaches 165°F in the thickest part. (Higher temp = faster browning; check at 45 minutes to avoid overcooking.)

While the wings bake, whisk together the melted butter, hot sauce, and maple syrup/honey (if using) in a small pan until smooth. Warm gently on the stove or in the microwave if needed. **For a milder sauce, increase the ratio of butter to Frank's sauce.
Let the wings rest 2–3 minutes after baking, then toss them in the buffalo sauce until fully coated, or serve with sauce on the side. Serve immediately with celery, carrots, and your favorite dip.
